The King Oyster Mushroom (Pleurotus eryngii), also called Eryngii Mushroom or king trumpet mushroom, is an edible mushroom from the Pleurotus family (oyster mushrooms).
King oyster mushrooms are endemic to mediterranean countries, North Africa and the Middle East, but nowaday also widely cultivated in Asia. Eryngii mushromms became very popular in Japan, China and many countries in South East Asia. The taste of the king oyster mushroom is reminescent to the porcini (Boletus edulis) mushroom and can be used as a substitute in porcini recipes.

Like all mushrooms, the king oyster mushroom contains a large amount of vitamin D 2. The eryngii mushroom may stimulate the immune system and contains the minerals and trace elements, calcium, chlorine, copper, iron, iodine, manganese, phosphor, potassium,sodium, sulphur and zinc.
King Oyster mushrooms are in high demand for culinary uses. Even after long cooking times the mushroom stays firm to the bite and are fully used, with hats and stems. They can be grilled, added to soups or stews and can also be eaten raw in salads. In contrast to many other mushrooms, eryngii mushrooms are considered to be easily digestible.
