We didn´t believe our eyes, as we discovered a green, red, yellow and even a blue rice
in our supermarket in Chiang Mai, Thailand. It was a new product and it promised to be
healthy as well. We bought a package of every color. As we steamed the rice, the result was a bit disappointing, only the blue and the yellow rice got vibrant colors, the red and the green rice was quite lame, so we started to experiment. Honestly, I think we would never had the idea to color our food, but this new product awakened our interest. The green Thai jasmine rice has been colored with pandanus leaves, so it should be easy to create our own green rice.

Recipe: Green Rice
Produce a natural green food color from pandanus leaves.
Depending on the age of the rice You´ll need 2 – 3 1/2 cups natural green food color for 1 cup of rice.
Cook the rice as always, just replace the water with the green food color.
