Nam Prik is the topic for mostly very hot Thai chili pastes, Nam Prik Noom is a bit of an exception, made from so called sweet green chilies, the Nam Prik Noom is a bit milder than others. Don´t get fooled by the name sweet green peppers, they are still hot. Nam Prik Noom is very popular in North Thailand, where it´s part of a so called, Hors d’œuvre Muang, a starter with Thai sausage delicacies. Nam Prik chili pastes are a traditional Thai meal since ancient times, served with steamed or grilled vegetables, sticky rice, pieces of grilled chicken or pork, crispy pork crust, Cha-Om (Acacia Pennata) omlette or smoked Thai mackerel Pla Too. Nam Prik dishes are eaten with the fingers.

Recipe: Nam Prik Noom Thai chili paste
Ingredients:
8 – 10 green, sweet chili peppers
2 – 3 small, red Thai shallots
4 – 6 garlic cloves
1 -2 tablespoons fish sauce
Preparation:
Roast and peel the chili peppers. In a mortar, pound garlic and shallots to a paste, then add the chili peppers and grind them, but not to much, the result should be some kind of chunky. Season with fish sauce and serve the Nam Prik Noom at room temperature. Nam Prik chili pastes are never served chilled !
