The hot & sour Thai squid salad (Yum pla myk), depends to the biggest group of Thai salad recipes, called Yum. Yum means mix together and signifies hot & sour dishes, mostly composed of lime juice, fresh herbs, chili and other ingredients. A Thai chef told us, that he once worked in a restaurant, which had more then 100 different Yum salads on the menu. Thai people love to eat Yum Thai salads while sitting together and drinking whiskey or beer at the evening or at night time. The hotness & sourness of this salads is very refreshing, but be a bit careful, salads of this type can be devilish, fine tune the amount of chili peppers to Your taste. In Thailand people use more than a dozen Thai chilis,
we cutted the amount already a bit down.

Recipe: Thai squid salad – Yum pla myk
Ingredients:
200 g squid
1 tomato or 2-3 cherry tomatoes
3-4 small, red Thai shallots
or 1/2 red onion
one hand full of celery leaves
1-2 spring onion
4-5 Thai chili prik kee noo
juice from 3 limes
1 teaspoon golden syrup (sugar syrup)
or palm sugar syrup
1 1/2 tablespoons fish sauce
optional: 1/2 teaspoon Umami,
MSG Monosodiumglutamat



Preparation:
Cut the tomato into small pieces, cut Thai chilies, spring onion and onion in fine rings and mix together with celery leaves in a bowl. Clean, wash and cut the squid into small pieces and blanch the squid pieces in boiling water for about 2-3 min, then put them into the bowl. Mix lime juice, fishsauce, golden syrup and Umami MSG and pour it over the salad. Mix well, garnish on a plate and serve the Thai salad while still warm.
